Olive Oil: Eat It – DON’T Heat It!

Olive oil is a great source of mono-unsaturated (omega-9) fatty acids—that is, when you eat it raw, drizzled over salads or veggies or used in dipping sauces. Nobody who loves Italian bread will argue with a plate of olive oil dressed with balsamic vinegar and parmesan cheese for dipping!

I pains me, though, to watch my friends using olive oil for sautéing. Those beneficial mono-unsaturated fatty acids are fragile, and heating them causes free-radical damage that leads to ageing diseases. Use saturated fats (coconut oil, butter and ghee) for cooking. They are stable when heated. Ghee is just clairified butter and doesn’t burn like butter does because the whey solids have been removed. (You can make your own ghee.)

The same holds true for the polyunsaturated fatty acids you find in vegetable oils, also known as the illustrious PUFAs. You’ve been told they are healthy, and there is an interesting story about that misinformation you can read in the same chapter. Keep it simple by remembering that the ONLY fats to cook with are the saturated ones! Buy organic, raw coconut oil by the tank if you can. You can eat it raw (solid) and use it for all your cooking needs. It offers many benefits, one of which is helping you to burn away those love handles!

By the way, if you occasionally get constipated, a “sure-fire” cure is to drink this down before bed (thanks, Nan!):Start with about 1/4 cup olive oil in a cup. Squeeze in the pulp and juice of two small tomatoes, whisk with a fork and drink it down. Tastes very Italian, and much better for you than a drug!

The Healing Power of Pleasure

Pleasure does have an energy of its own…and it’s good for you!

You’ve landed here to read about getting healthier, and that often means giving up some pleasure. There’s always a balance – and balance in all things is something each of us must consider.

As you read my posts and books about healthy lifestyle choices, I encourage you to keep in mind that it’s not about being strict or perfect. Each piece of information is just that—information. Take it in, breathe, and use it as you feel it applies to your health and wellbeing.

I’ve been living the concepts I’m proposing to you for decades, and for me, the sense of wellbeing, boundless energy, and lack of pain I feel usually trumps a desire to eat a food, for instance, that I know will keep me awake with pain all night long. Still, I sometimes go for the momentary pleasure and deal with a poor night’s sleep. It works for me.

It’s like Paris. When I’m in Paris, I eat bread every day. It’s that good. Otherwise, I’m gluten-free. I have to toss all the travel photos, because I blow up like a balloon, and my joints hurt—but hey—it was really, really fun, and I know I’ll be back to normal in a week’s time.

The idea of going without what you love doesn’t usually feel good. Take away the extremes. Experiment with your psyche. Choose the long-term “feel-good” a little more often, and try some other ways to find pleasure, like listening to music, dancing (even alone at home), meandering in nature, or gazing at the sky.

The Two Faces of Kale

Do you know that kale, although a wonderfully nutritious green when eaten steamed and drizzled with balsamic vinegar, is not a good choice when it’s raw? Kale, one of the most nutrient-dense foods, contains vitamin B6, dietary fiber, calcium, potassium, vitamin E, vitamin B2, iron, magnesium, vitamin B1, omega-3 fatty acids phosphorus, protein, folate, and niacin—just for starters.

On the down side, however, kale contains a hefty dose of both phytates and oxalates.Both phytic and oxalic acids are “anti-nutrients” that block your body’s ability to absorb important minerals. Mineral absorption is the name of the game, folks. It’s good to be a mineral sponge. So what to do about kale? Steam it, and drizzle with a tasty balsamic vinegar. The steaming removes a good portion of kale’s anti-nutrients, and the vinegar mitigates them further—as well as turning the dish into a really tasty treat.

If you are willing, you can make live kale kraut by culturing it, which makes it arguably the most nutritious veggie on the planet! Cultured kale is still raw, but the fermenting process removes its anti-nutrients, and adds valuable probiotics as well.

What Are The Two Greatest Gifts of All?

This is the time we all want to indulge, and indulge we should! The trick is to have it all, without losing sight of what feels good vs what you fear you’ll have to do without come January 1. Lest you eat yourself under the table to the point of feeling like the Baron Harkonnen, read this quote I dug up from a likeminded glutton, Sydney Smith, Renaissance writer, wit and cleric:
